Veggie nuggets are a great way to get kids to eat their veggies in a fun way.

Ingredients
2 cups mixed vegetables finely chopped
1 cup breadcrumbs
1 egg
1/4 cup grated cheese
Salt and pepper to taste
Preparation
1. Preheat oven to 375°F (190°C)
2. Mix all ingredients in a bowl and shape into small nuggets
3. Place on a baking sheet and bake for 20-25 minutes or until golden and crispy.
