Mini waffle sandwiches are a fun twist on a classic PB&J sandwich.

Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
1 egg
2 tablespoons melted butter
1/2 teaspoon vanilla extract
Fillings:
Peanut butter or almond butter
Jam or jelly
Fresh berries and banana
Avocado slices
Bacon strips
Cream cheese
Preparation
1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt
2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until well combined
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the batter light
4. Preheat a mini waffle maker
5. Lightly grease the waffle maker with cooking spray or a small amount of melted butter.
6. Pour a small amount of batter (about 1-2 tablespoons) onto the center of the waffle maker, spreading it slightly to cover the surface. Close the waffle maker and cook until the waffles are golden brown and crisp, usually 2-3 minutes. Repeat until all the batter is used.
7. Let the waffles cool off slightly and mix match your choice of fillings, making sandwich with 2 waffles
