Stuffed bell peppers are a colorful and tasty way to enjoy a balanced meal.

Ingredients
4 bell peppers
1 cup cooked rice
1/2 cup diced tomatoes
1/4 cup diced onions
1/2 cup shredded cheese
Olive oil for drizzling
Preparation
1. Preheat oven to 375°F (190°C)
2. Cut the tops off the bell peppers and remove the seeds
3. Mix cooked rice, tomatoes, onions, and cheese in a bowl
4. Stuff the bell peppers with the mixture and place in a baking dish
5. Drizzle with olive oil and bake for 25-30 minutes until the peppers are tender.
