Mini pancake bites are a great way to make breakfast fun and easy for kids to eat.

Ingredients
1 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg
2 tablespoons melted butter or vegetable oil
1 teaspoon vanilla extract (optional)
1/4 cup maple syrup
Fresh berries (optional)
Preparation
1. Preheat oven to 350°F (175°C)
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt
3. In another bowl, whisk together the milk, egg, melted butter (or oil), and vanilla extract if using.
4. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter may be a little lumpy, which is okay. Don’t over-mix.
5. Grease a mini muffin tin and fill each cup halfway with batter
6. Add berries or other desired toppings
7. Bake for 10-12 minutes or until golden.
